Love this knife and recommend buying it.
I love how fluid this knife feels in your hand. I used it for a very large taco bar party and man did it not fail. The knife is nicely weighted, very balanced. The blade is made of Japanese steel which is top shelf. If you’re in the market for a go-to powerhouse in the kitchen, this won’t let you down…H&B all day baby!!!
This item met the high expectation set by the ATK review. I will by my next knife from Hedley & Bennett. It is beautiful.
This is the one we grab - all our other knives get ignored.It's a total joy to use.We have other knives in the same price range, and a couple fall into the classification of excellent. But if you are spending a lot on a knife, you want a few things: easy to use for a long time, natural feel/balance so that you have full cutting dexterity, and an edge that will hold and not go dull for a long time. Ideally, you just want it to perform what you need to without having to think about the knife itself. This knife is like that. Great weight, balance, and the edge is dreamy - cuts are perfect.Note that it's sharpened at a slightly rare angle, any pro sharpening craftsman will match it anyway, but I recommend not using any standard tools on this and never a pull through sharpener! That angle is part of the reason it cuts like a dream. It's worth it to have a professional sharpen it.Finally, I wasn't sure about the handle color, but now I love it. Probably because I enjoy the knife so much I associate it together, but it's now my favorite.
You may wonder, why would I pay $120 for a chef's knife when I can get SomeRandomBrand chef's knife for $20?Oh, well now, you are a noob!When you prep mise-en-place, a giant pile of cut and prepped food, if the knife isn't sharp, or it doesn't sit in your hand well, you're gonna have a bad day in the kitchen.The H&B Chef's Knife effortlessly slices through onions, glides through tomatoes, chops through ginger, minces green onions and cilantro, and cuts my sandwich. It cuts and gets out of the way. The blade is thin enough to give a santuko a run for its money. I really should cut some cheese with it!We have some nice knives in the house, Wusthof, Henckels, Victorinox -- H&B is now the go-to favorite around our kitchen.ONE CAVEAT -- though the knife is sharp, the metal used seems to be fairly soft. I used a scotch-brite scrubbing sponge on the knife and there are definitely scratches on the finish. This won't affect the knife's performance, but if you want to retain its mirror finish, you may want to avoid the scotch-brite scrubbing sponge on the green side!

Wish the blade was a tad taller, I have big hands. Knife came packaged well and felt like opening up a gift. Am hopeful the blade will stay sharp, I do about 3000 cuts a week on all types of bread and it’s been holding strong.
I became a big fan of sour dough bread. Though the caveat was finding a knife that would keep the bread in shape even after cutting without having to have the slices to big or to small. Or having smashed slices trying to cut the bread, as you gripped the bread to cut it. You'll know what I'm talking about if you have tried to cut bread before. Really impressed, knife was sharp out of the box, cut the bread like butter. Puts all my knifes at home to shame. The price tag for this knife is well worth it. The saying goes you pay for what you get for. Definitely worth paying extra to get a knife that would last you and allow for smooth easy cutting vs struggling to cut the bread. What I found interesting was the knife is designed in CA and made in Chine with German steel. I would think if it was made out of the USA it would lose its quality and all, but it seems to be up to par with the an item made in the US. Grip, design and just about every feature of the knife was very impressive. As well came in a nice little box well packed. Vs another noted knife called Cutco comes in a flimsy box which I never understood. So A+ on the packing and A++ on the amazing quality of your guys knives. Next time I cut some bread I'll try to get a little video of how it cuts and glides through like butter.
Received my order today and I was so happy about it. The quality is great and I so love it. It’s just that I ordered for the enoki color and I received the caviar one.
Package did not get opened right away as it was a gift. When it was opened the chef's knife is bowed. Deeply disappointed in the lack of product integrity and support.
