I added this Mercer Asian Collection Nakiri to my collection of kitchen knives in March and it has been my primary food prep knife for about 5 months. I could not be happier with it. I have become a Mercer Cutlery fan over the last couple of years because every Mercer knife I own is stunning for it's price and compares favorably with knives costing three times as much. This Nakiri is no exception. Prior to this purchase I had been using a Mercer M22907 Nakiri style knife and it was great too but the blade shape more closely resembled a Santoku. Before that I used a Calphalon Santoku for a number of years. I tried the M22907 because I wanted something lighter in that Santoku shape and I bought the Asian collection Nakiri because I wanted to try this more traditional blade shape as well as the traditional handle shape. In my case I bought the traditional handle shape in the NSF material and I feel it was an excellent choice.I love everything about this knife. It is extremely light weight. The steel takes a very keen edge which lasts as long I I could reasonably hope...I sharpen about every 10 days. The simple traditional handle shape in the super grippy NSF material is perfect. I always feel like I have a solid grip on the knife no matter what I am cutting or how sticky, gooey or slippery my hands get.In addition to the two Mercer knives mentioned so far I also own a plain edge slicer, a wavy edge bread knife and several paring knives and these are just the Mercer brand knives that I own and use. I have a lot of food prep knives and the Mercers are all among my favorites.
I love it. It has become the first knife I reach for in a lot of situations. Thin, sharp, cuts veggies like a laser. It's good for meat too, just stay away from bone. Very thin and slicey blade with a good height to rest your fingers against.
This knife is great for slicing veggies. It making super thin onion slices and nice even thickness tomato slices for hamburgers. The NSF handle has a nice feel, and is nonslip with wet hands. Definately get the recommended blade cover. Both to protect the blade edge and your fingers. This one is really sharp right out of the package.
I enjoyed using the knife very good for vegetables I had people over for a party when they left I haven’t seen the knife since.???😡
Now my favorite knife to use. I cut meats and veggies with it. The only thing I don't use it on are tough things like potatoes and carrots or turnips. It was sharp from day one, and so comfortable. I mean, yeah, it's not a Shun, but it also doesn't cost $200. This is a solid, inexpensive, but high quality Nakiri style knife and it is a joy to use.
I was hesitant about this one as I already own quite a few knives, but just one mercer, the very regular one ( which has blown my mind on how sharp it can get) so after carefully inspecting this one I placed the order ( took quite a bit of pics as I see there is near to none here ) so it arrived today and the first thing i did was a sharpness test and .... Heck this one I think it's one of the sharpest knives I've received right out of the box with no stropping at all, it went thriugh the paper like butter, i think even better than other $180+ knives I own. The handle its from like a rubbery plastic which I'm reallyyyy really enjoying. Really buy it, don't think that much. Only thing is that i'd love a cover being included for this one, you can increase a bit the price and throw a sheath.
Durable construction, light, and precision sharpness. I have 2 other culinary knives from Mercer and all are high on my favorites list. This knife works well for just about any knife application and is exceptional for smashing garlic, etc. I will point out that the broad blade design makes it safer when slicing (less likely to cut your "guide" hand).
Comfortable to use, comes sharp out of the box and retains it's edge very well. Highly recommend as a prep knife that you can abuse.
This is supposedly a cheap "learner student" knife. My lady and I eat a LOT of stir fries and this knife gets used 2-3 times a day for big and small jobs. It has stayed amazing sharp with just a few swipes on the ceramic "steel" - a couple of times a week. This is a veg knife and we use it for veg only, it cleans easily in fresh water - no soap -and after 6 months, has no signs of rust or stains. It is quite light and nicely balanced. The exceptionally thin blade makes very easy work of slivering almonds, chopping walnuts, etc - they don't fly all over, they just lay there - cut. We have lots of hi quality expensive knives - but this gets reached for most often.
Open package to wash knife.Slice dish cloth.Then slice finger.Should cut vegetables.
